As for Zero sum, which could easily be found via searching engines has a Chinese equivalent as "零和博弈"; however it is tough for me to find the term of Variable sum games. It could be found in English engines but Google does not turn out any single page for its Chinese trans.
Turning to GameTheory.NET for more detailed reference and found some defs for the terms.
Variable Sum

Constant SumIn a Variable sum game, the sum of all player's payoffs differs depending on the strategies they utilize. This is the opposite of a constant sum game in which all outcomes involve the same sum of all player's payoffs. In variable sum games, players have some interests in common which may lead to all players being better off through cooperation.

Zero SumIn a constant sum game, the sum of all players' payoffs is the same for any outcome. Hence, a gain for one participant is always at the expense of another, such as in most sporting events. Given the conflicting interests, the equilibrium of such games is often in mixed strategies. Since payoffs can always be normalized, constant sum games may be represented as (and are equivalent to) zero sum game in which the sum of all players' payoffs is always zero.

Constant sum as mentioned above is translated as 定和赛局, in which 定 means constant.A zero sum game is a special case of a constant sum game in which all outcomes involve a sum of all player's payoffs of 0. Hence, a gain for one participant is always at the expense of another, such as in most sporting events. Given the conflicting interests, the equilibrium of such games is often in mixed strategies.
Thus, I guess variable sum shall better be translated as 变和博弈。
